Oatmeal Raisin Cookies

Ingredients

  • ¾ c. shortening
  • 1 c. white sugar
  • 2 large eggs, room temperature
  • 1/2 t. vanilla
  • 2 t. water
  • 2 c. all-purpose flour
  • 1 t. baking soda
  • 1 t. ground cinnamon
  • 1/4 t. salt
  • 2 c. quick-cooking oats
  • 1 c. raisins
  • ½ c. chopped walnuts

Glaze

  • 3/4 c. powdered sugar
  • 1/4 t. cinnamon
  • 2+ Tbls. water

Instructions

Preheat oven to 350°.

Cream shortening and white sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and water.

In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts.

Drop by spoonfuls (size as desired) and flatten to 1/4-in. thickness.

Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

GLAZE: If you want to add a sweet icing, mix powdered sugar cinnamon and about 2 tablespoons water; stir to desired consistency and spread over each cookie.
