Oatmeal: Baked Cherry-Almond

Wonderful with Door County dried cherries

Ingredients

  • 4 c. vanilla almond milk (regular milk is fine)
  • 1 c. steel-cut oats
  • 1 c. dried cherries
  • 1/3 c. packed brown sugar
  • 1/2 t. salt
  • 1/2 t. ground cinnamon
  • 1/2 t. almond extract

Toppings

  • additional milk (will need to reheat leftovers)
  • toasted sliced or slivered almonds, optional
  • additional brown sugar, optional

Instructions

Combine all ingredients and pour into a greased 2 qt. deep casserole dish.

Bake at 350 degrees for 1 hour to 1 hour and 15 minutes (a little longer if needed) until thickened and oats are tender. Stir occasionally.

Remove from oven and divide into individual servings. Top with additional milk, brown sugar and almonds if desired.

Reheats well in microwave, add a little milk and brown sugar if desired, but don’t add nuts until just before eating.
