Oatmeal: Baked Peaches & Cream Oatmeal

I use frozen Michigan peaches, thawed.

Ingredients

  • 2 c. old fashioned oatmeal (not instant)
  • 1/2 t. salt
  • 1/2 t. ground cinnamon
  • 1/8 t. ground nutmeg
  • 3 Tbls. white sugar
  • 1-3/4 c. water
  • 1-3/4 c. milk
  • 1 c. peaches, diced (frozen, canned or fresh peeled)

Toppings for serving

  • additional milk or cream
  • brown sugar,if desired
  • chopped pecans, roasted (optional)

Instructions

Thaw peaches if using frozen. If using canned, drain juice.

Add diced peaches, oats, salt, cinnamon, nutmeg, sugar, water and milk in a bowl; mix together. Transfer to a greased (spray with cooking spray) 2-1/2 quart casserole dish.

Bake in oven at 350 degrees for 50-55 minutes or until thickened. Stir 2-3 times while baking.

Remove from oven and spoon into 4 bowls. Top with a little brown sugar, milk or cream and pecans if desired.
