Oatmeal: Baked Peaches & Cream Oatmeal
I use frozen Michigan peaches, thawed.
Ingredients
- 2 c. old fashioned oatmeal (not instant)
- 1/2 t. salt
- 1/2 t. ground cinnamon
- 1/8 t. ground nutmeg
- 3 Tbls. white sugar
- 1-3/4 c. water
- 1-3/4 c. milk
- 1 c. peaches, diced (frozen, canned or fresh peeled)
Toppings for serving
- additional milk or cream
- brown sugar,if desired
- chopped pecans, roasted (optional)
Instructions
Thaw peaches if using frozen. If using canned, drain juice.
Add diced peaches, oats, salt, cinnamon, nutmeg, sugar, water and milk in a bowl; mix together. Transfer to a greased (spray with cooking spray) 2-1/2 quart casserole dish.
Bake in oven at 350 degrees for 50-55 minutes or until thickened. Stir 2-3 times while baking.
Remove from oven and spoon into 4 bowls. Top with a little brown sugar, milk or cream and pecans if desired.
NOTE: Serves 4.
