Oatmeal: Baked Gingerbread Oatmeal

Perfect over the Christmas Holiday
We love everything Gingerbread

Ingredients

  • 2-1/2 c. old fashioned oats
  • 1 t. baking powder
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1/2 t. ground ginger
  • 1/2 t. ground cloves
  • 1-3/4 c. milk (we use 1%)
  • 1/3 c. molasses
  • 1/3 c. unsweetened applesauce
  • 1 large egg
  • 1 t. vanilla extract

Toppings for Serving

  • milk, optional
  • brown sugar
  • chopped pecans

Instructions

In a medium bowl, mix together the oats, baking powder, salt, cinnamon, ginger, and cloves.

In a separate bowl, whisk together the milk, molasses, applesauce, egg, and vanilla.

Pour the liquid mixture into the oat mixture and stir to combine.

Pour the entire mixture into a greased 8x8-inch pan, smoothing the top with a spatula.

Bake at 350 degrees for 35 minutes or until the oatmeal is set. Let cool for 5 minutes and serve warm. To serve, cut into individual squares and transfer into individual bowls; add a little milk, brown sugar and chopped pecans.

NOTE: Serves 6 small servings or 4-5 medium size.
