Orzo Pasta with Cranberries & Almonds
Quick and easy side dish.


Ingredients
- 2/3 c. uncooked orzo pasta
- 2 shallots, finely chopped
- 1 Tbls. + 1 t. olive oil
- 1 Tbls. + 1 t. butter
- 1/2 c. sliced almonds
- 1/4 c. dried cranberries
- 1/2 c. whipping cream
- 1/2 c. chicken broth
- 1/4 c. white wine
- salt & pepper
Instructions
Cook orzo according to package directions (about 9 minutes).
Meanwhile, in a nonstick skillet sauté shallots in oil and butter for 1 minute.
Add the nuts; sauté for 1-2 minutes or until lightly browned.
Stir in cranberries, cream, broth and wine. Cook over medium heat for 3-4 minutes or until thickened.
Drain Orzo; add cranberry mixture. Season with salt and pepper.
NOTE: Serves 4.
