Multi-Grain Waffles

Ingredients

  • 1 c. all-purpose unbleached white flour
  • 1 c. whole wheat pastry flour
  • 1 c. yellow cornmeal
  • 1 Tbls. white sugar
  • 1 Tbls. baking powder
  • 3/4 t. baking soda
  • 1/4 t. salt
  • 3 eggs
  • 4 egg whites
  • 3 c. low-fat buttermilk
  • 1/2 c. unsweetened applesauce
  • 3 Tbls. canola oil
  • 2 Tbls. butter, melted

Instructions

In a large bowl, combine dry ingredients (first seven). Stir with a whisk to blend.

In another large bowl, whisk the eggs, egg whites, buttermilk, applesauce, oil and butter; whisk in the dry ingredients. Or, you can use an electric mixer on low, but just until mixed; do not over beat.

Preheat waffle iron and lightly coat with oil or non-stick spray. Pour 1/2 cup batter on waffle iron, and cook to desired doneness. Make sure the iron is not too hot.

Be sure to brush iron with oil or spray occasionally.

Serve with butter and syrup.

NOTE: Makes 12 round waffles or 12 squares (2 on each side).
