Cottage Cheese Lemon Mousse

This is a super creamy, refreshing and loaded with protein, low-calorie dessert

Ingredients

  • 1/2 Tbls. (1-1/2 t.) gelatin powder
  • 3 Tbls. cold water
  • 2 c. low-fat cottage cheese (Daisy)
  • 1/4 c. maple syrup (or more to taste)
  • 2 Tbls. lemon zest
  • 2 Tbls. lemon juice (or more to taste)
  • 1 t. vanilla extract, optional

Topping Choices

  • dollop of whipped cream
  • lemon zest (key to more lemon flavor)
  • fresh raspberries
  • fresh blueberries

Instructions

In a small bowl, combine gelatin powder and water. Stir well until the gelatin powder is completely dissolved. Set aside to bloom for about 5 minutes – Important!

After blooming, gently heat the gelatin mixture in a microwave for 10-15 seconds or on the stove over low heat until it becomes liquid. Do not let it boil.

In food processor or blender, add the cottage cheese, maple syrup, lemon zest, lemon juice, vanilla extract and the warm gelatin mixture. Blend until smooth and creamy.

Taste the mixture and adjust the sweetness or lemon flavor according to your preference by adding more maple syrup or lemon juice if necessary. Blend again.

Pour the mixture into serving cups or mini jars or custard cups; refrigerate for at least 2-3 hours or until the mousse has set.

To serve, garnish with additional lemon zest, a dollop of whipped cream and a few berries if desired.

NOTE: Makes 8 mini mason jars or 6 custard cups.
