Mostaccioli Salad

Makes a large batch. You can cut this recipe in half to serve 6 people.

Ingredients

  • 1 lb. mostaccioli pasta, cooked and drained
  • 1 medium red onion, sliced
  • 1 medium cucumber, sliced
  • 1 container of cherry tomatoes, or to your liking

Dressing

  • 1-1/2 c. white vinegar
  • 1-1/2 c. white sugar
  • 1/4 c. Bertoli extra light olive oil
  • 1 t. each salt & pepper
  • 1 Tbls. prepared yellow mustard

Instructions

Cook pasta according to package directions, drain and cool.

Combine dressing ingredients and mix with a whisk or electric mixer on low until combined. Set aside or refrigerate until ready to assemble.

Add pasta to a large bowl.

Pour dressing over pasta and add onion, cucumber and cherry tomatoes and toss to coat.

Refrigerate overnight and stir periodcially.
