Mostaccioli

Ingredients

  • 1/2 lb. lean ground turkey or ground chuck
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 14-1/2 oz. can diced tomatoes, undrained
  • 6 oz. can tomato paste
  • 1/2 c. water
  • 1 t. dried oregano
  • 1/2 t. salt
  • 1/4 t. ground pepper
  • 2 c. low-fat cottage cheese
  • 1 t. dried marjoram
  • 8 oz. mostaccioli noodles
  • 1-1/2 c. shredded mozzarella cheese
  • 1/4 c. grated parmesan cheese

Instructions

In a large sauté pan, cook the turkey or beef, onion and garlic over medium heat until meat is no longer pink; drain if necessary.

Stir in tomatoes, tomato paste, water, oregano, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.

In a small bowl, combine cottage cheese and marjoram; set aside.

Cook mostaccioli according to package directions. Drain and set aside.

Lightly grease an 11x7x2-inch baking dish with cooking spray.

Spread 1/2 cup of sauce in baking dish.
Layer half of the mostaccioli, meat sauce and mozzarella cheese.
Top with cottage cheese mixture.
Then layer with remaining mostaccioli, meat sauce and mozzarella cheese. Sprinkle with parmesan cheese. Dish will be full.

Bake uncovered at 350 degrees, for 25-30 minutes or until heated through.

NOTE: Serves 6. You can assemble ahead of time and refrigerate covered with foil. Take out and place in oven covered; turn oven on to 350 degrees. Bake for 30 minutes, uncover and continue baking for 20 minutes longer or until heated through
