Morning Glory Muffins
My creation, moist and great flavor
Ingredients
- 1 c. canola oil (or 1/2 c. oil and 1/2 c. unsweetened applesauce)
- 3 eggs
- 1-1/4 c. sugar
- 2 t. vanilla
- 2 c. all-purpose unbleached white flour
- 1/2 t. salt
- 2 t. baking soda
- 2 t. cinnamon
- 1 apple, grated
- 1/2 c. raisins
- 1 c. grated carrot (see note)
- 1/4 c. unsweetened coconut
- 1/2 c. chopped walnuts or pecans
Instructions
In a medium bowl, mix oil, sugar, eggs and vanilla.
Stir in dry ingredients; mix well.
Fold in apple, carrots, raisins, coconut and nuts.
Spoon into greased or paper lined muffin cups until 2/3 full.
Bake at 350 degrees for about 20 minutes. Let sit in pan 10 minutes before removing to a wire rack.
NOTE: I used my food processor to grate the carrots. You can also buy them pre-shredded.
