Mexican Chopped Salad with Honey-Lime Dressing
Ingredients
- 2-1/2 c. chopped romaine lettuce
- 1/4 c. reduced-fat feta cheese, crumbled
- 15.5 oz. can black beans, rinsed & drained
- 3/4 c. chopped seeded tomato
- 3/4 c. chopped peeled jicama
- 3/4 c. frozen corn, thawed and uncooked
- 1/2 c. thinly sliced radishes
- 1 ripe avocado, diced
- small red pepper, chopped
Honey-Lime Dressing
- 1/4 c. fresh lime juice
- 1/4 c. olive oil
- 2 Tbls. honey
- 2 Tbls. finely chopped fresh cilantro
- 1 garlic clove, peeled and minced
- 1 t. chopped jalapeno pepper
Instructions
Mix dressing ingredients with an emulsion mixer (or mini food processor) for a few seconds.
Assemble salad ingredients and pour dressing over all; toss to mix.
NOTE: Serves 6-8
