Master Muffin Mix

This recipe will make 6 batches of muffins
All muffins are super moist.
Best muffin making hack ever!
Ingredients
- 12 c. all-purpose unbleached white flour (9 cups) (or use half whole wheat pastry flour if desired)
- 4-1/2 c. sugar (3-1/4 cups + 2 Tbls.)
- 2 t. salt (1-1/2 t.)
- 4 Tbls. baking powder (3 Tbls.)
- 1 Tbls. baking soda (2-1/4 t.)
Instructions
If you only want to make three-quarters of a batch, use measurements in parenthesis above; you will get about 4 muffin recipes (2-3/4 each) out of half a batch.
Combine all ingredients and mix thoroughly with a wire whisk, making sure to break up any flour lumps.
Store in a tightly covered container, in a cool dry place (I keep in the refrigerator for ultimate freshness).
Before using, be sure to give the mix a good stir as ingredients of different particle size may settle at different levels over time. This mix will keep for 3-4 months or longer (I have kept up to 6 months, but it usually doesn’t last that long).
