Red Potatoes: Mashed with Garlic & Olive Oil
Ingredients
- 1/4 c. olive oil
- 1 garlic clove, minced
- 2 lbs. red potatoes, quartered
- 1/3 c. heavy whipping cream
- 1/3 c. milk
- 2 Tbls. butter, softened
- 1 t. salt
- 1/4 t. pepper
- 2 green onions, chopped
- 1/4 c. grated parmesan cheese
Instructions
Combine oil and garlic in small food processor; process until blended.
Place potatoes in a large pot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered for 20 minutes or until tender. Drain potatoes, return to pot.
Mash potatoes, gradually adding cream, butter, salt, pepper and enough milk to reach desired consistency. Stir in green onions.
Place potatoes in a serving bowl and drizzle with garlic olive oil and cheese (or, you can mix the olive oil and cheese in with the green onions).
NOTE: Serves 6.
