Mashed: Garlic & Chive Mashed Potatoes

Made Christmas Eve 2020. Really good flavor and easy!
Ingredients
- 4 lb. Yukon potatoes (appox. 10 potatoes), peeled and quartered
- 1 1/4 c. milk
- 2 garlic cloves, smashed
- 3 Tbls. butter
- 1/4 c. low fat sour cream
- 1 Tbls. fresh chives, plus more for garnish
- 1 t. salt
- 1/8 t. ground pepper
Instructions
Placed washed & quartered potatoes in a 3 qt. pot; bring them to a boil and cook for 12-14 min until tender. Don’t overcook, the potatoes can get pasty.
While potatoes are cooking, in a small pot, bring the milk and 2 smashed garlic cloves to a boil (stir so bottom of pan doesn’t scorch). Remove from heat and let the mixture stand.
Drain and mash cooked potatoes, using a potato masher. Place potatoes back on the stove at medium heat, stirring constantly for 2 minutes until slightly dry, than remove from heat.
Remove garlic cloves from milk and add milk to potatoes; add butter, sour cream, salt, pepper and 1 tablespoon of chives. Using a hand mixer, mix until well combined.
Serve warm and sprinkle chives on top for garnish.
