Mashed: Drive 'em Wild Potatoes

Ingredients

  • 6 large russet potatoes
  • 1 c. low-fat sour cream
  • 1/4 c. butter
  • 8 slices center-cut bacon, cooked and crumbled
  • 3 Tbls. fresh chives, divided
  • 2 c. low-fat mozzarella cheese, finely shredded
  • 1/2 c. Swiss cheese or cheddar, shredded

Instructions

Peel and quarter potatoes. Cook in boiling water for about 25 minutes until tender. Drain and return to pan.

Add sour cream and butter and mash. Stir in bacon and 2 tablespoons chives. Stir in mozzarella cheese.

Spoon into a greased 3-quart casserole dish.

Sprinkle Swiss or cheddar cheese on top.

Bake at 350 degrees for 20-25 minutes until heated through and cheese is melted.

Sprinkle with remaining 1 tablespoon of chives.
