Mashed: Cauliflower Mashed Potatoes

These taste amazing just like real mashed potatoes

Ingredients

  • 1 large head (4-5 cups) cauliflower, florets with a little stems
  • 2 Tbls. butter
  • 1 - 2 Tbls. half & half
  • salt and pepper to taste
  • a pinch of garlic powder, optional if you'd like

Instructions

Steam, or microwave cauliflower until soft.

Line a colander with a towel, then fill with cooked cauliflower. Wrap towel up around cauliflower to absorb moisture. If not drained well, consistency will be soupy.

Transfer cooked cauliflower to a food processor. Add butter and half-and-half, a little at a time, to get desired consistency.

Season with salt, pepper and a pinch of garlic powder if desired.

Serve 4
