Mashed: Asiago Mashed Potatoes

Nice change from plain mashed potatoes

Ingredients

  • 2-1/2 lbs. Yukon gold potatoes
  • 4 Tbls. butter
  • milk or half & half
  • 1/2 c. Asiago cheese, shredded
  • 1/4 t. garlic powder

Instructions

Peel and dice potatoes. In a large saucepan, boil for approximately 30-40 minutes, or until tender. Drain (see note below).

Mash potatoes with a potato masher until broken up; add butter and milk (or half & half) until desired consistency, and mix with a hand mixer (or a standalone mixer) until smooth.

Blend in Asiago cheese and garlic powder; mix until smooth.

NOTE: Serves 4-6. To avoid lumps when mashing, put potatoes through a Ricer first before mashing and adding other ingredients.
