Mashed: Asiago Mashed Cauliflower Potatoes

A great healthy mashed potato alternative with a ton of flavor.
Super easy and quick.

Ingredients

  • 1 medium-large head cauliflower, cut into 1-inch chunks
  • 4 oz. low fat cream cheese, softened
  • ½ c. (2 oz.) shredded Asiago cheese
  • 2 Tbls. butter
  • 2 Tbls. coarsely chopped fresh parsley (or 1 t. dried)
  • ¼ t. pepper
  • ½ t. sea salt
  • Pinch of garlic powder (optional)

Instructions

Steam cauliflower until very tender (12-15 minutes). Transfer to a colander, and let stand 5 minutes. Pour cauliflower onto an old absorbent towel. Wrap up for a few minutes to absorb any extra moisture.

Transfer cauliflower to a food processor. Add cream cheese, Asiago cheese, butter, pepper, ½ t. sea salt and garlic powder, if using. Process until blended.

Fold in parsley and transfer to a serving dish.

Serves 4

NOTE: It is important to get all the moisture out of the cauliflower!
