Marinated Cold Fresh Veggies

Ingredients

  • 1/2 pint cherry tomatoes, pricked with a toothpick
  • 1 c. broccoli florets, cut into bite-size pieces
  • 1-2 stalks of celery, cut into bite-size pieces
  • 1 small yellow squash, sliced
  • 1 c. fresh mushrooms, quartered
  • 1/2 can whole black olives (large size)
  • 1 cup cauliflower, cut into bite-size pieces
  • handful of mini carrots (slice thin if thick)
  • 4 oz. Italian (oil) salad dressing (Wishbone)
  • parmesan cheese for garnish

Instructions

Mix veggies and add dressing.

Cover and refrigerate for 24 hours. Stir several times.

Sprinkle with freshly grated parmesan cheese before serving.
