Maple Yogurt Parfaits with Caramelized Apples & Sugared Pecans

So refreshing and light.
This recipe makes 2 parfaits, adjust accordingly to make more.
You can make all components ahead of time and assemble before serving.

Ingredients

  • Apples
  • 1 Tbls. butter
  • 2 Tbls. brown sugar
  • 1/2 t. cinnamon
  • 1/4 t. vanilla
  • 2 c. granny smith or macintosh apples, diced small
  • Pecans
  • 1 Tbls. butter
  • 1/2 t. cinnamon
  • 1 Tbls. brown sugar
  • 1/2 c. pecans, chopped
  • Yogurt
  • 1 cup plain yogurt (see note below)
  • 1 Tbls. honey
  • 1/8 t. maple extract

Instructions

APPLES: Melt butter in medium sauce pan, and then add the brown sugar, cinnamon and vanilla. Stir in apples and cook over medium heat until apples are soft and caramelized. Set aside to cool. You can refrigerate until ready to assemble.

SUGARED PECANS: Melt butter in small sauté pan. Add brown sugar and cinnamon; stir to blend and add pecans. Cook over medium high heat, stirring to coat the pecans until they are slightly toasted. Transfer to a plate and let cool completely.

MAPLE YOGURT: Mix yogurt, honey and maple extract together in a small bowl. Can make ahead and refrigerate until needed.

To Assemble: Fill bottom of two parfait or wine glasses with 1 tablespoon of apples and 1 tablespoon of sugared pecans. Spoon 1/4 cup yogurt over the apples. Spoon another 1/4 cup apples on top of the yogurt. Divide the remaining yogurt between the two glasses and top with remaining apples. Garnish with remaining pecans.

Chill until ready to serve, then let stand about 20 minutes at room temperature before indulging.

NOTE: You can also use vanilla yogurt, but don’t add the honey to sweeten; just add maple extract and stir. Or, just use maple yogurt if you can find it.

If you don’t have maple extract, you don’t need it. Just add a little cinnamon on top before serving.
