Maple Bourbon BBQ Chicken Sandwiches with Apple Slaw (Slow Cooker)

The Bourbon flavor is amazing and so easy to make

Ingredients

  • 2 lbs. boneless, skinless chicken breasts
  • 1 c. ketchup
  • ½ c. bourbon (Jack Daniels)
  • 3 Tbls. pure maple syrup
  • 3 Tbls. apple cider vinegar
  • 1 Tbls. molasses
  • 1 Tbls. Dijon mustard
  • 1 Tbls. Worcestershire sauce
  • 1 t. onion powder
  • 1 t. garlic powder
  • ½ t. red pepper flakes
  • 8 whole wheat buns, for serving (toasted optional)

Apple Slaw

  • 10 oz. pkg. Mann’s Broccoli Cole Slaw (see Note below)
  • 3 scallion onions, finely chopped
  • 1 tart firm granny smith apple, cut into thin short match sticks
  • ½ c. plain low-fat Greek yogurt (Fage)
  • ½ c. low-fat mayonnaise with olive oil
  • 1 Tbls. apple cider vinegar
  • 1 Tbls. pure maple syrup
  • 2 t. Dijon mustard
  • salt & pepper, to taste

Instructions

Place chicken breast in the bottom of a 5 or 6 qt. slow cooker.

In a mixing bowl, whisk together the ketchup, bourbon, maple syrup, apple cider vinegar, molasses, mustard, Worcestershire, onion powder, garlic powder and red pepper flakes. Pour over the chicken. Cover and cook for 2 hours on high or 4-5 hours on low, until the chicken is cooked through. Transfer to a large bowl and shred with two forks. Add as much sauce back in as desired.

While the chicken cooks, prepare the slaw. Or make slaw several hours before starting the chicken and let sit in refrigerate all day.

Apple Slaw: In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, maple syrup, mustard, salt and pepper until smooth. Add the broccoli slaw, scallions and apple; toss to coat using a rubber spatula or large spoon. Refrigerate for 4 hours or up to 1 day (slaw tastes better when allowed to sit in the refrigerator for several hours).

Assemble the Sandwiches: Pile the shredded chicken onto the bottom bun, top with slaw, then add the top bun. Enjoy warm.

NOTE: If you don't care for broccoli slaw, you could substitute a 10 oz. package of shredded coleslaw with carrots
