Maple Balsamic Salad with Dried Cranberries & Pear

Perfect in Fall and throughout Winter!
Ingredients
- mixed greens for 6 people
- thinly sliced red onion
- dried cranberries, dried cherries or raisins
- sliced pear or chopped apple
- toasted pecans or walnuts
- crumbled Gorgonzola or goat cheese
Maple Balsamic Salad Dressing
- 6 Tbls. extra-virgin olive oil
- ΒΌ c. good quality balsamic vinegar (18 - 25 yr.)
- 2 Tbls. + 2 t. pure maple syrup
- small garlic clove, minced
- 1/8 t. hot pepper sauce
- 1/8 t. salt
- 1/8 t. coarse black pepper
Instructions
Put all dressing ingredients in a small blender; cover and blend until emulsified and creamy. Transfer to a jar; store in refrigerator. Shake before using.
TO ASSEMBLE SALAD: In a salad bowl, add greens, red onion and berries, fruit, nuts and cheese of your choice. Combination ideas below.
Combo #1: Use dried cranberries or cherries, pear, pecans and Gorgonzola cheese
Combo #2: Use dried cranberries or raisins, apple, walnuts and goat cheese.
Serves 6.
