Mandarin Orange Lettuce Salad

A refreshing salad with a lot of flavor for so few ingredients
Ingredients
- 1 large head of bib or romaine lettuce, washed and torn up
- 1 small can of mandarin oranges
- 1 pkg. (1/2 cup) slivered almonds
- 2 Tbls. sugar (optional)
- 4 pieces of cook bacon, crumbled (optional)
Dressing
- 2 Tbls. white sugar
- 1/2 t. salt
- 2 Tbls. apple cider vinegar (Heinz)
- 1/4 canola oil
Instructions
You don't need to coat the almonds in sugar, but if you'd like to . . . in a heavy saucepan heat sugar and almonds on medium heat just until sugar melts and coats the almonds. Let cool and break apart. Store in a sealed container until ready to use.
Mix the dressing ingredients well and heat on low until sugar is dissolved.
Coat lettuce with dressing as desired; add nuts and 1 small can of mandarin oranges.
Top with crumbled bacon bits, if desired.
NOTE: Dressing can be made up to a couple of days ahead. Store in refrigerator until ready to use, then heat in microwave just until warmed a bit.
