Macaroni and Cheese
Ingredients
- 2 to 2-1/2 c. dry elbow macaroni (whole wheat or Dreamfield’s)
- 2-1/2 Tbls. butter
- 1/4 c. unbleached all-purpose white flour
- 3 c. milk
- 3/4 t. salt
- 1 c. grated Gruyere cheese
- 3/4 c. grated cheddar cheese
- 1/8 t. cayenne pepper
- 1 slice whole wheat bread
- pinch of paprika
Instructions
Put bread slice in mini food processor and grind to make crumbs. Set aside
Cook macaroni according to package directions. Drain and set aside.
Melt butter in a saucepan over medium heat. Sprinkle flour over the top and whisk quickly to form a paste.
Slowly add the milk and stir with a whisk to blend. Cook on medium heat, stirring occasionally (stir constantly) until the sauce has thickened, about 7-10 minutes.
Add the cheeses, salt and cayenne and heat until the cheeses melt.
Combine cooked pasta and sauce. Transfer to a lightly greased casserole dish. Top with bread crumbs and sprinkle with paprika.
Bake at 350 degrees for 20-25 minutes, until bubbly.
