Lemon Rice

Easy, light and refreshing. Perfect side dish for fish, chicken or pork.

You can use brown or white long grain rice.

Ingredients
  • 2 c. chicken broth

  • 1 c. uncooked long grain rice (Uncle Ben's)

  • 2 t. butter

  • 1/4 t. garlic powder

  • 1 lemon zested (add more or less to your liking)

  • 2 Tbls. lemon juice

  • 2-3 fresh basil leaves, chopped (or 1/4 t. dried basil)

  • salt, to taste

Instructions

In a medium saucepan, bring broth, rice, butter, garlic powder to a boil.

Reduce heat; cover and simmer for 25 minutes.

Let stand 5 minutes then add lemon juice, zest and basil. Season with a little salt.

Fluff with a fork and serve.

NOTE: Serves 4 You can also use fresh basil if desired.
