Lemon Rice

Easy, light and refreshing. Perfect side dish for fish, chicken or pork.
You can use brown or white long grain rice.
Ingredients
- 1 c. water
- 1 c. chicken broth
- 2 Tbls. lemon juice
- 2 t. butter
- 1 c. uncooked long grain rice
- 1/4 t. dried basil
- 1/4 t. grated lemon zest
- 1/4 t. lemon-pepper seasoning
Instructions
In a medium saucepan, bring water, broth, lemon juice and butter to a boil.
Stir in rice, basil and lemon zest. Reduce heat; cover and simmer for 25 minutes (if using Basmati rice, follow directions on the package). Let stand 5 minutes or until the water is absorbed.
Before serving, sprinkle with lemon-pepper.
NOTE: Serves 4
