Easy, light and refreshing. Perfect side dish for fish, chicken or pork.
You can use brown or white long grain rice.
2 c. chicken broth
1 c. uncooked long grain rice (Uncle Ben's)
2 t. butter
1/4 t. garlic powder
1 lemon zested (add more or less to your liking)
2 Tbls. lemon juice
2-3 fresh basil leaves, chopped (or 1/4 t. dried basil)
salt, to taste
In a medium saucepan, bring broth, rice, butter, garlic powder to a boil.
Reduce heat; cover and simmer for 25 minutes.
Let stand 5 minutes then add lemon juice, zest and basil. Season with a little salt.
Fluff with a fork and serve.
