Lemon Poppy Seed Muffins

Ingredients

  • 1/2 c. butter, melted
  • 2 eggs
  • 2 Tbls. poppy seeds
  • 1 Tbls. lemon zest (save juice from lemon)
  • 1 t. lemon extract (or 2 Tbls. fresh lemon juice)
  • 1 c. milk

Glaze (optional)

  • 1.4 c. white sugar
  • juice from 1 lemon, for glaze (optional)

Instructions

Preheat oven to 400 degrees.

In a large mixing bowl, combine butter, eggs, lemon zest, lemon extract, poppy seeds and milk until thoroughly combined.

Add Master Mix and stir until just combined.

Spoon batter into greased or paper lined muffin cups.

Turn oven temp down to 375 degrees and bake for 15-18 minutes or until toothpick inserted in the center comes out clean.

Just before baking, if you would like extra lemon flavor, you can take the juice of a lemon and 1/4 c. sugar and heat in a small saucepan until sugar is dissolved. When muffins come out of the oven, spoon glaze over each muffin before removing from pan. Let sit in pan a couple minutes, then remove and cool on a wire rack.

NOTE: Makes 12 muffins

Depending on how big your muffin tin is, you may have extra batter to make a few mini muffins as well.
