Lemon Cookies

Delicious lemon cookie that melts in your mouth
Ingredients
- ½ c. butter, softened
- 8 oz. pkg. low fat cream cheese
- 1-1/2 c. white sugar
- 1 large egg, room temperature
- 1 t. lemon zest
- 1 t. vanilla
- 1 t. lemon extract
- 2-1/4 c. unbleached all-purpose white flour
- ½ c. powdered sugar
- 3 t. baking powder
- ½ c. powdered sugar for rolling cookie dough in
Instructions
In a large bowl, using a hand-held mixer, beat butter, cream cheese, sugar and lemon zest until blended.
Add egg, vanilla and lemon extract.
By hand, stir in the flour, ½ c. powdered sugar and baking powder until combined. Refrigerate dough for a few hours before baking.
When ready to bake, using your hands, roll chunks of dough into round balls (or use a cookie scoop) and then roll each ball in powdered sugar to coat.
Place on lightly greased (or parchment lined) cookies sheet pans. Cookies will spread out.
Bake at 350 degrees until they no longer appear wet on top, about 8-11 minutes.
Let the cookies cool on the pan for 5 minutes before placing them on a wire cooling rack lined with paper towels (to absorb the grease). Cool completely.
