Lemon Bread

Ingredients

  • 1/2 c. butter
  • 1-1/4 c. white sugar
  • 2 eggs
  • 1/2 c. milk
  • 1 Tbls. grated lemon peel
  • 1/2 t. lemon extract
  • 1-1/2 c. all-purpose unbleached white flour
  • 1 t. baking powder

Glaze

  • Juice from 1 lemon + 1/4 c. sugar

Instructions

Cream butter, sugar, eggs, milk, lemon extract and lemon peel. Gradually stir in dry ingredients. Pour into a medium greased and floured loaf pan.

Bake at 350 degrees for 50-60 minutes.

About 10 minutes before bread is done, cook glaze ingredients until dissolved and clear. Remove from heat.

When you take the bread out of the oven, loosen edges of bread with a knife; pour glaze over warm bread. Let stand in pan for 5 minutes before removing to a wire rack to cool.

Pour glaze over each loaf(s). Let stand in pan 5 minutes then remove.

NOTE: Also makes 2 mini loaves; only bake 40-45 minutes
