Lemon Bars
Mark's favorite


Ingredients
- 2 c. flour
- 1/2 c. powdered sugar
- 1 c. butter, cold
Topping
- 4 eggs, slightly beaten
- 6 Tbls. fresh lemon juice
- zest the rind of 1 lemon
- 1/2 t. baking powder
- 2 c. white sugar
- 4 Tbls. all-purpose unbleached white flour
Instructions
Crust: Using a fork or pastry cutter, mix the flour, powdered sugar and butter until well blended. OR add flour and powdered sugar to a food processor. Cut the butter into chunks and pulse in until crumbly. Works slick and my preferred method!
Press crumb mixture into a 9 x 13" pan. Bake at 350 degrees for 15-20 minutes.
While crust is baking, mix all of the above topping ingredients in a blender (or use a hand mixer); pour over crust. Reduce oven temp to 325 degrees and bake for 25 minutes.
Cool and sprinkle with powdered sugar. Cut into squares.
