Lasagna: in a Bun
Can make ahead of time and freezes well
Ingredients
- 4-6 hoagie or sub buns (8 inches)
- 1 lb. ground chuck
- 14 oz. jar of spaghetti sauce (your choice)
- 1 t. fresh crushed garlic
- 1/2 t. dried Italian seasoning
- 1/2 t. dried basil
- 1 c. low-fat cottage cheese
- 1/4 c. grated Parmesan cheese
- 3 t. dried parsley
- 1 c. shredded mozzarella cheese, divided
- 1 c. shredded cheddar cheese, divided
Instructions
Cut thin slices off tops of buns. Hollow out centers, leaving 1/4 inch thick shells; discard centers.
In a skillet, brown meat and drain fat. Add spaghetti sauce, garlic and Italian seasoning. Cook 4-5 minutes or until heated.
Meanwhile combine cottage cheese, Parmesan, parsley and half of the cheddar and mozzarella cheeses; mix well.
Spoon meat sauce into buns; top with cheese mixture.
Place on baking sheet. Cover loosely with foil.
Bake at 350 degrees for 20-25 minutes. Uncover, sprinkle with remaining cheddar and mozzarella. Return to oven for 2-3 minutes or until cheese melts.
NOTE: If you freeze them, put remaining cheese on top right away, wrap in foil and freeze (double wrap). Thaw frozen buns individually in foil and bake (in foil) for about 25+ minutes until heated through.
