Key Lime White Chocolate Cheesecake Bars

Ingredients
- 1-1/4 c. vanilla wafer cookies (approximately 24) or 1-1/4 c. crushed graham crackers
- 1/4 c. (1/2 stick) butter, melted
- 1/2 c. heavy whipping cream
- 8 oz. low-fat cream cheese
- 3 Tbls. white sugar
- 3 Tbls. key lime juice (Nellie & Joes 100% Key Lime Juice)
- 1 t. freshly grated lime zest
- 6 oz. (2/3 c. chips) white chocolate, melted
Instructions
Line an 8-by-8-inch baking pan with foil, letting the foil extend over the sides for easy lifting later.
Using a food processor, pulverize cookies; pulse in melted butter. If using graham cracker crumbs, pour melted butter into crumbs and mix with a fork until blended. Press the crumbs into the bottom of the pan to form a crust. Chill.
Using a mixer, beat cream until peaks form. Set aside.
In another bowl, using a hand mixer, blend the cream cheese, sugar, lime juice and zest until smooth. Add melted white chocolate and mix on low just to blend. Gently fold whipped cream into cream cheese mixture.
Spread filling over crust and chill at least 2 hours.
Lift cheesecake from pan and cut into small squares.
