Banana Bread with Kahlua Glaze

Kahlua takes Banana Bread to a whole new level!
Ingredients
- ½ c. unsalted butter, softened
- ½ c. white sugar
- 2 large eggs
- 3 very ripe bananas, smashed (1-1/2 cups)
- 2 c. unbleached all-purpose white flour
- 1 t. baking powder
- 1 t baking soda
- 1 t. salt
- ¾ c. shredded sweetened coconut
Kahlua Glaze (see Note below)
- 1-1/4 c. powdered sugar
- 1/2 c. Kahlua coffee liqueur
Instructions
Pre-heat oven to 350 degrees. Coat a 9x5-inch loaf pan (or 3 mini loaf pans) with cooking spray and dust with a little flour; set aside.
With an electric mixer, cream softened butter and sugar on high speed, until light and fluffy. Add eggs and bananas, and mix on low speed.
Slowly add the flour, baking soda, baking powder and salt.
Fold in the shredded coconut.
Transfer the batter into prepared loaf pan (or mini loaf pans).
Bake for 50-60 minutes (35-40 minutes for mini loaf pans) or until cake tester or toothpick inserted into the center comes out clean. Allow bread to cool in the pan(s) for 10 minutes.
While bread is still in the pan, use a cake tester utinsel or thin wooden skewer to poke holes in the top, to let the Kahlua glaze seep down inside.
Glaze: While the loaf is cooling in the pan, whisk the powdered sugar and Kahlua together until very smooth.
Pour the glaze over the top of the loaf or mini loaves. Use a knife to go around edges to loosen in pan. Flip bread onto a cooling rack, set over a piece of wax paper. You can use the wax paper to pour the dripping back over the loaf for an extra glaze coating if you like.
Allow glaze to dry before cutting.
NOTE: For a thinner glaze, use 1 c. powdered sugar with 1/3 c. Kahlua.
