Johnny Cake (Cornbread)

Ingredients

  • 1 c. milk (warmed a bit)
  • 2 Tbls. canola oil
  • 1 egg (2 eggs if you like it even more moist)
  • 1/4 c. honey
  • 1 c. all-purpose unbleached white flour
  • 1 c. cornmeal
  • 1/2 t. baking soda
  • 2 t. baking powder
  • 1/2 t. salt
  • Syrup and butter for serving

Instructions

Grease an 8 or 9-inch square pan or 9-inch cast iron skillet (see note below).

Preheat oven to 375 degrees.

Mix milk, honey, oil and egg(s). Stir in dry ingredients and mix until smooth.

Pour batter into prepared pan and bake for 18 - 20 minutes.

When done, cut, slice horizontally, spread butter on halves and pour syrup over.

NOTE: I sometimes pour the batter into a scones pan to bake individual serving pieces. Then wrap and freeze leftover pieces for another time. Just heat in microwave and add syrup.
