Johnny Appleseed Cake with Caramel Sauce

Ingredients
- 3/4 c. canola oil
- 3 eggs, slightly beaten
- 2 t. vanilla
- 3/4 c. white sugar
- 3/4 c. packed brown sugar
- 1-1/4 c. unbleached all-purpose white flour
- 1 c. whole-wheat pastry flour
- 1 t. salt
- 2 t. baking powder
- 1/2 t. baking soda
- 1 t. nutmeg
- 1/4 t. curry powder
- 1 Tbls. cinnamon
- 2 large tart cooking apples (2-1/2 cups) 1/2" cubes
- 3/4 c. finely chopped walnuts
Sauce
- 1 c. brown sugar
- 1/2 c. whipping cream
- 3 Tbls. butter
- 1 t. vanilla
Instructions
In a large mixing bowl, mix oil, eggs, vanilla, and sugars until well blended. Add dry ingredients. By hand stir in the apples and walnuts.
Spread into a greased and floured 9x13” baking pan. Bake for 40-45 minutes in a pre-heated 350 degree oven. Cool completely.
Make sauce just before serving. In 1 qt. saucepan combine brown sugar, whipping cream and butter. Cook over medium heat, stirring constantly until sugar is dissolved (3-4 minutes). Stir in vanilla.
Drizzle sauce over each piece of cake, dollop with whipped cream if desired.
