Jello Cake
Especially refreshing and light for a summer dessert
Ingredients
- 1 pkg. white cake mix
- 1 pkg. (3 oz.) Jell-O (your choice of flavor and color)
- 1 pkg. (3 oz.) Jell-O (your choice of flavor and color)
- 2 c. boiling water
- 1 container of Truwhip (a healthier version of Cool Whip)
Instructions
Prepare cake mix as directed on package. Pour batter into 2 round 8" or 9" pans. Bake as directed. Cool 10 minutes. Remove from pans and cool completely.
Place cake layers top sides up back in the clean pans. Prick each layer with fork at 1/2" intervals.
Pour 1 c. boiling hot water in one package of Jell-O, mix and spoon over one cake layer. Repeat with other package of Jell-O over other cake layer. Refrigerate 3-4 hours until set.
Dip each layer (in pan) into warm water for 10 seconds and invert. Frost with dairy whipped topping.
- At Christmas use green & red Jell-O
- For lemon-lime use yellow and green (frost with Fluffy Lemon Pudding Frosting)
- Red and orange are a good combination
NOTE: Can also use a 9x13" pan; cool in pan and prick holes with a fork. Pour Jell-O onto cooled cake.
