Italian Sausage with Artichokes & Feta

Ingredients

  • 1 lb. mild bulk Italian sausage (see note below)
  • small red onion, finely chopped
  • 1 clove garlic, minced
  • 12 oz. jar marinated quartered artichoke hearts, drained
  • ½ c. tomato sauce
  • ¼ c. dry red wine
  • ½ t. Italian seasoning
  • ½ c. crumbled low-fat Feta cheese
  • minced fresh parsley, optional
  • 2 c. dry gemelli or spiral pasta

Instructions

In a large skillet, cook sausage, onion and garlic over medium heat until sausage is no longer pink and onion is tender. Break up into crumbles as you fry. Remove to a plate lined with paper towel to absorb the grease. Wipe out any grease in pan with paper towel.

Return sausage to pan and stir in artichoke hearts, tomato sauce, wine and Italian seasoning; heat through. Gently stir in cheese.

While sausage mixture is heating through, cook pasta according to package directions. Drain.

Place pasta on a large platter or shallow bowl, top with sausage mixture and garnish with chopped parsley, if desired.

Serves 4.

NOTE: You can use hot Italian sausage (casings removed) as well, or use mild with a little red pepper flakes added, to get a little more kick!
