Icebox Cookies

My mom and grandmother used to make Icebox Cookies all the time.
Ingredients
- 3-1/2 c. unbleached all-purpose white flour
- 3 t. baking powder
- dash of salt
- 1 c. butter, softened
- 2 c. white sugar
- 1/2 c. packed brown sugar
- 2 eggs
- 2 t. vanilla extract
- 1 c. chopped nuts (pecans or walnuts)
Instructions
Sift together flour, baking powder and salt; set aside.
In a bowl, cream butter and sugars. Add eggs, and vanilla; beat well. Add dry ingredients and mix well by hand with a wooden spoon. Stir in nuts.
Divide dough into two parts and shape into log rolls. Wrap in foil and chill overnight.
When ready to bake, slice cookies 3/8- inch thick. Bake on greased baking sheets at 350° for about 10 minutes (edges will start to get brown).
Remove from oven and cool completely on wire racks lined with paper towel to absorb grease.
NOTE: One of my dad's favorite cookies.
