Ice Cream Sundae Dessert

A quick and easy fun summer dessert.

Ingredients

  • 1 pkg. (12 oz.) vanilla wafer cookies
  • 1/2 c. melted butter
  • 2 c. (12 oz.) semi-sweet or dark chocolate chips
  • 1 can (12 oz.) evaporated milk
  • 1/2 t. salt
  • 2 qts. Breyer's vanilla ice cream, softened

Instructions

Combine cookie crumbs and butter, set aside 2/3 cup.

Press remaining crumbs into a greased 9 x 13 x 2" pan. Chill uncovered for 10-15 minutes.

In a saucepan over medium to heat, melt chocolate chips with milk and salt. Cook and stir with a whisk until thick (about 15-20 minutes).
*Once chocolate starts to thicken, reduce heat to low and stir constantly.

Remove from heat and spread over crust.

Transfer pan to freezer and let sit uncovered for about 30 minutes.

Spread softened ice cream over chocolate. Sprinkle with reserved crumbs. Cover and freeze at least 2 hours.

NOTE: You can also use chocolate chip mint or candy cane ice cream with chocolate cookie crumbs.
