Honey Oat Nut Muffins

Ingredients

  • 1/3 c. butter, melted
  • 2 eggs
  • 1/3 c. honey
  • 1 c. milk
  • 1 c. oatmeal
  • 1/2 c. chopped walnuts

Streusel Crunch Topping

  • 1/3 c. flour
  • 1/2 t. cinnamon
  • 1/3 c. brown sugar
  • 1/4 c. cold butter (cut into chunks)
  • 1/3 c. oatmeal
  • 1/3 c. walnuts or pecan, finely chopped

Instructions

Preheat oven to 400 degrees.

Streusel Crunch Topping: Add flour, nuts, brown sugar, and cinnamon to a mini food processor. Add cold butter and pulse until coarse crumbs form. Add oatmeal and pulse just to blend in. Transfer to a medium bowl and using a fork, blend in the nuts. Set aside

Muffin Batter: In a large mixing bowl, mix the butter, eggs, milk, honey, milk, walnuts and oatmeal until thoroughly combined. Add Master Mix and stir until just combined.

Spoon batter into greased or paper lined muffin cups. Top with Streusel topping.

Turn oven temp down to 375 degrees and bake for 15-18 minutes or until toothpick inserted in the center comes out clean. Remove muffins from pan and cool on a wire rack.
