Honey Kale Currant & Almond Salad

Simply delicious! Even if you don't like Kale, you'll love this salad.
Ingredients
- 4 c. thinly sliced fresh kale (or other greens if you prefer)
- ¼ c. slivered almonds, toasted
- ¼ c. dried currants
Dressing
- 2 Tbls. Asiago cheese
- 1 Tbls. good balsamic vinegar
- 1 Tbls. olive oil
- 1-1/2 t. honey
- ¾ t. coarsely ground pepper
- ½ t. sea salt
Instructions
Place kale, almonds and currants in a large bowl.
In a small bowl, whisk Asiago, balsamic, olive oil, honey, pepper and salt until blended.
Drizzle dressing over salad; toss to coat.
Serves 4
NOTE: You can make ahead of time because kale does not go limp as quickly as lettuce does.
