Hawaiian Sloppy Joes
This recipe came from a kid's cookbook that our grandson checked out his library.
Nice change from the traditional sloppy joe recipe.
Ingredients
- 1 lb. ground beef or ground turkey
- 1 small to medium onion, cut into chunks
- 1 med. green pepper, cut into small chunks
- 2 t. jarred minced garlic
- ½ t. dried ginger
- salt & pepper to taste
- 3/4 c. ketchup
- 2 Tbls. brown sugar
- 2 Tbls. soy sauce
- 1 Tbls. apple cider vinegar
- ½ t. hot sauce
- 5 slices pre-cooked bacon, crumbled
- 15 oz. can pineapple slices
- 6 hamburger buns, toasted is optional
Instructions
Pre-cook Bacon: I liked to cook bacon in microwave, quick easy and no mess. Line a paper plate with paper towel, lay strips on top, place a layer of paper towel over bacon. Microwave on high for 3 to 3-1/2 minutes or until crispy. Remove bacon to a plate to cool, then crumble and set aside.
Use a mini food processor to chop onion and green pepper into small pieces. Transfer to a large fry pan.
Add ground beef or turkey to the fry pan and cook on medium heat, breaking up into small pieces. 10-minutes before meat is done, add garlic, dry ginger, salt and pepper and cook until meat is no longer pink. Drain grease.
In a small bowl, combine ketchup, brown sugar, soy sauce, apple cider vinegar and hot sauce. Add sauce to pan with meat and bring to a bubble. Reduce heat, cover pan and let simmer on low heat for 10 minutes to let flavors blend.
Stir in crumbled bacon to the fry pan and cook for 2 minutes.
To serve, scoop meat onto a bun, top with a pineapple ring.
