Hawaiian Quesadillas

Quick to make, healthy and delicious

Ingredients

  • 4 whole wheat or multi-grain FlatOut flat breads - See Note
  • 4 Tbls. basil pesto
  • 1 small can of Pastorelli Pizza sauce (I used half, freeze the rest for another use)

Toppings

  • 8 oz. can pineapple tidbits
  • 6 oz. pkg. Usinger's or Neuske's Canadian bacon (sliced into wide strips)
  • 1-1/2 to 2 c. mozzarella or pizza cheese
  • fresh basil leaves (cut into thin strips)
  • diced green peppers, optional
  • sliced black olives, optional
  • chopped red onion, optional
  • red pepper flakes, optional

Instructions

Spread 1 Tbls. pesto on bottom of one flat bread, then spread pizza sauce evenly on top of pesto.
Layer toppings on one half of each flat bread.

Pre-heat a non-stick skillet, sprayed with a little non-stick spray (or lightly oil), and carefully place flat bread with toppings in skillet.

Fold the flat bread in half. When bottom is lightly browned and crisp, flip once to cook other side until it is browned, cheese is melted and all contents are heated through.

Remove from pan and place on a cutting board. Cut into 3 triangular slices.

NOTE: Large soft taco shells would work as well. Serves 4.
