Hawaiian Fried Rice with Ham

Great way to use up leftover ham from Easter or Christmas

Ingredients

  • 1 Tbls. canola oil
  • 1-1/2 to 2 c. chopped ham
  • small onion, chopped
  • red pepper, seeded and diced
  • 3 eggs, lightly beaten
  • 1 c. pineapple tidbits, drained
  • 3 c. pre-cooked, cold rice (we use Uncle Ben's brown)
  • 3 Tbls. Kikkoman’s low sodium soy sauce (more/less to taste)
  • 1 Tbls. sesame oil
  • red pepper flakes, to taste
  • 2 Tbls. chopped green onions, garnish

Instructions

Preheat a large skillet or wok to medium heat. Pour oil in the bottom. Add ham, onion and red pepper; fry until tender.

Slide the ham, onion and red pepper to the side and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetables.

Add the rice and pineapple to the veggie, ham and egg mixture. Pour the soy sauce and sesame oil on top; add red pepper flakes to give it a little kick. Stir and fry the rice and veggie mixture until heated through and combined.

Sprinkle chopped green onions on top and serve.

NOTE: Serves 6. Warm artesenal bread dipped in Mango Balsamic Vinegar goes well with this dish.
