Ham: Orange Bourbon Glazed Ham
Source: Evan Williams Bourbon Cookbook
Made for Easter 2019. Everyone loved the glaze!
Ingredients
- 5-6 lb. fully cooked ham (boneless)
Bourbon Glaze
- 2 t. ground allspice
- 1 t. ground cinnamon
- 1 Tbls. grated orange zest
- ½ c. orange juice (use zest if using fresh oranges)
- ½ c. Bourbon (Evan Williams)
- ½ c. light brown sugar
- 2 t. cornstarch
Instructions
Cut ham diagonally across entire surface about 1/4-inch deep. Place ham on a roasting rack in a roasting pan (see note below) and add ½ cup of water. Cover with heavy duty foil.
Bake in oven at 325 degrees until thermometer registers 125 degrees (about 1-1/2 hours). After 1 hour and 15 minutes, make glaze.
GLAZE: Mix the spices, orange juice, zest, bourbon, brown sugar and cornstarch in a small saucepan. Bring to a boil over medium heat and simmer 2 minutes, stirring constantly. Remove from heat.
Place ¼ cup of the glaze mixture in a bowl and brush on ham (after it has baked 1-1/2 hours). Bake, uncovered, an additional 30 more minutes or until thermometer reaches 135 degrees.
Remove from oven and let ham stand for 15 minutes. Slice ham and serve with remaining glaze.
NOTE: You can probably use any type of bourbon. If you don't have a roasting rack, use tin foil crumbled up into a few oblong balls and set ham on top.
