Halibut: Broccoli Pie

A nice change from fried or baked fish during Lent

Ingredients

  • 10 oz. (1-1/2 c.) package halibut, boneless and skinless (I use Orka Bay)
  • Old Bay seasoning, salt & pepper to taste
  • 3/4 c. finely chopped onion
  • 2 c. (8 oz. pkg.) sharp cheddar cheese, grated (divided)
  • 2 stalks fresh broccoli, semi cooked and chopped
  • 1-1/3 c. milk
  • 3 eggs
  • 3/4 cup Bisquick baking mix (I use low-fat)
  • 1/2 t. lemon pepper
  • 1/4 t. minced garlic
  • 1/2 t. thyme
  • sliced tomato, optional

Instructions

Soak halibut in a little milk for about 45 minutes to get rid of any fishy flavor. Rinse with cold water and pat dry. Place pieces in a small baking dish.

Pre-cook halibut and season with a little garlic salt, pepper and Old Bay Seasoning. Bake at 350 degrees for 20-25 minutes. Cool a bit; remove bone and skin if needed, then flake. Can make ahead of time and refrigerate until ready to assemble.

Sauté onions in a little margarine or butter until soften a bit. Set aside.

In a large bowl, mix 1-1/2 cups cheese, flaked halibut, sautéed onion and broccoli.. You can ahead refrigerate until ready to bake or continue with next steps and then bake.

Just prior to baking, use an electric mixer and mix milk, eggs, Bisquick, lemon pepper, garlic and thyme. Pour over halibut-broccoli mixture and mix well.

Transfer to a 10” greased pie plate.

Bake at 400° degrees for 35-40 minutes or until knife inserted in center comes out clean. If top gets too brown, place a sheet of foil lightly on top. Be sure center is set before removing from oven.

Top with sliced tomatoes, if desired and then with remaining cheese; bake 3-5 minutes longer to melt cheese.

Cool 5 minutes and cut into wedges.
