Haddock: Baked with Lemon Pepper (or Cod)

Grills nicely too

Ingredients

  • 1 lb. fresh or frozen cod or haddock
  • 1/2 t. kosher salt (see note)
  • 1-1/2 Tbls. unsalted butter (see note)
  • 1/2 t. lemon-pepper seasoning
  • 1/2 t. Old Bay seasoning
  • 1/4 t. paprika

Instructions

Thaw fish, if frozen

Arrange fish in an oblong glass baking dish. Sprinkle with salt. In microwave melt butter. Stir in lemon-pepper, Old Bay seasoning and paprika. Mix together and drizzle butter mixture over fish.

Bake covered in a 400 degree oven about 20 minutes or until fish flakes easily when tested with a fork.

NOTE: To get rid of fishy smell, rinse and soak fillets in a little milk (in a zip lock bag) 1 hour before cooking. Rinse and pat dry with paper towels.

If using regular butter instead of unsalted, decrease the amount of salt a bit.
