Guacamole (Chipotle's recipe)

Ingredients

  • 2 ripe Hass avocados
  • 1 small lime
  • 2 Tbls. fresh cilantro, chopped
  • ¼ c. red onion, finely chopped
  • 1/2 jalapeno pepper (including seeds), finely chopped
  • ¼ t. kosher salt
  • 1-2 Tbls. Pace picante sauce, optional

Instructions

Cut avocado in half, discard pit, and place avocado in a medium bowl. Toss and coat with lime juice. Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.

Fold in onion, cilantro, jalapeno and picante sauce, if using, and mix well. Adjust seasonings if needed.

Serve with Tostito chips.
