Guacamole (Chipotle's recipe)

Ingredients
- 2 ripe Hass avocados
- 1 small lime
- 2 Tbls. fresh cilantro, chopped
- ¼ c. red onion, finely chopped
- 1/2 jalapeno pepper (including seeds), finely chopped
- ¼ t. kosher salt
- 1-2 Tbls. Pace picante sauce, optional
Instructions
Cut avocado in half, discard pit, and place avocado in a medium bowl. Toss and coat with lime juice. Add the salt and using a fork or potato masher, mash until a smooth consistency is achieved.
Fold in onion, cilantro, jalapeno and picante sauce, if using, and mix well. Adjust seasonings if needed.
Serve with Tostito chips.
