Greek Salad

Phase 1
Ingredients
- Romaine lettuce for 4, torn into bite-size pieces
- ½ of a medium cucumber
- 1 tomato, chopped
- 2-3 Tbls. chopped or sliced red onion
- ½ c. crumbled reduced fat feta cheese
- mushroom slices, optional if desired
- sliced black olives, optional if desired
Dressing
- 1 Tbls. extra-virgin olive oil
- 1 Tbls. fresh lemon juice
- 1/2 t. dried oregano
- 1/4 t. salt
Instructions
Combine lettuce, cucumber, tomato, onion and cheese in a large bowl. Add mushroom slices and black olives if using.
Whisk together the oil, lemon juice, oregano and salt in a small bowl. Pour over lettuce mixture and toss to coat.
NOTE: Serves 4. If you like a lot of dressing, or want to make additional salads, double the dressing ingredients.
