Greek Salad

Phase 1

Ingredients

  • Romaine lettuce for 4, torn into bite-size pieces
  • ½ of a medium cucumber
  • 1 tomato, chopped
  • 2-3 Tbls. chopped or sliced red onion
  • ½ c. crumbled reduced fat feta cheese
  • mushroom slices, optional if desired
  • sliced black olives, optional if desired

Dressing

  • 1 Tbls. extra-virgin olive oil
  • 1 Tbls. fresh lemon juice
  • 1/2 t. dried oregano
  • 1/4 t. salt

Instructions

Combine lettuce, cucumber, tomato, onion and cheese in a large bowl. Add mushroom slices and black olives if using.

Whisk together the oil, lemon juice, oregano and salt in a small bowl. Pour over lettuce mixture and toss to coat.

NOTE: Serves 4. If you like a lot of dressing, or want to make additional salads, double the dressing ingredients.
