Gratin: Sweet Potato Gratin

Ingredients

  • 1-1/2 lb. sweet potatoes (3)
  • 3 Tbls. canola oil, divided
  • 1 clove garlic, minced
  • 2/3 c. chicken broth
  • Salt and pepper to taste
  • 1/2 c. blanched whole almonds, chopped
  • 1/2 c. plain bread crumbs
  • 1/2 c. shredded Swiss cheese
  • 2 Tbls. fresh parsley, chopped

Instructions

Peel and slice sweet potatoes 1/4-inch thick.

Rub 1 tablespoon oil in an 8 x 8 or 9-inch square baking dish.

Sprinkle garlic on bottom and layer sweet potatoes in dish. Pour broth over and season with salt and pepper. Cover and bake at 375 degrees for 30-35 minutes.

Mix almonds, bread crumbs, Swiss cheese, 1/4 t. salt, 1/4 t. pepper and parsley; toss with remaining 2 tablespoons of oil.

Sprinkle over sweet potatoes and bake an additional 20-30 minutes until golden brown and potatoes are tender.
