Good For You Morning Muffins

Ingredients

  • 1 c. whole wheat pastry flour
  • 1 c. unbleached all-purpose white flour
  • 3/4 c. ground flaxseed
  • 3/4 c. white sugar
  • 2-3/4 t. baking powder
  • 1/4 t. baking soda
  • 2 t. ground cinnamon
  • 3/4 t. salt
  • 4 egg whites
  • 1 egg
  • 1/3 c. orange juice
  • 1/4 c. canola oil
  • 1/2 c. unsweetened applesauce
  • 2 t. vanilla
  • 2 c. grated carrots
  • 1/2 c. chopped pecans
  • 1/2 c. unsweetened flaked coconut
  • 1/2 c. raisins
  • 1 medium tart apple, peeled and shredded

Instructions

In a large bowl, combine flours, flaxseed, sugar, baking powder, cinnamon, salt and baking soda.

In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla.

Stir into dry ingredients just until moistened.

Fold in carrots, pecans, coconut, raisins and apple.

Coat muffin cups with cooking spray (PAM baking spray works well) or use foil liners; only fill 3/4 full.

Bake at 350 degrees for 15-18 minutes or until toothpick comes out clean.

Cool for 5 minutes before removing from pans to wire rack.

NOTE: Makes 18 muffins
